1 egg
1 cup peanut butter
1 cup sugar
Preheat oven to 350 degrees. Mix ingredients well. Form into 1-inch balls or drop by rounded teaspoons on to ungreased cookie sheet. Press with the back of a sugared fork to make a crisscross design on top of each cookie. Bake 10-12 minutes, until the cookies look dry on top. Let cookies cool on the cookie sheets before removing and storing in an air-tight container. Make 28 small cookies.
I put 3/4 cup Enjoy Life Mini Chocolate Chips in the peanut butter cookies too. Very yummy!
